Comments

- Operator has had dishwasher service technician and a plumber on-site to assess the high-temperature dishwasher. Dishwasher technician has temporarily set-up a sanitizer line to feed chlorine-based sanitizer into the rinse cycle. 50 ppm chlorine residual detected at the dish surface after dishwasher's rinse cycle. OK. Ensure to use test strips to monitor concentration of sanitizer daily.
- Operator is looking into permanent solution for dishwasher - possibly replacing current dishwasher with a low-temperature chemical dishwasher.
Please contact the health inspector for inspection once the new dishwasher has been installed.

- Raw meats stored below ready-to-eat food items in coolers - good.
- Hot held food items in warmers were measured to be at or above 60C - good.
- No frozen food thawing out at room temperature at time of inspection - good. Reminder to thaw food under cold running water or in the cooler overnight.
- General sanitation satisfactory. Reminder to clean behind/under cooking equipment on a weekly basis at a minimum.
