All fridges are maintaining foods at 4 degrees Celsius or colder. Walk in freezer is -23 degrees C. Liquid soap and paper towel at handsinks. Buckets of quat sanitizer for wiping cloths had 200 PPM residual. Dishwasher final rinse reached 71 degrees Celsius at the plate surface. Parfait tray in cooler requires cleaning to remove build up.
