- Ensure utensils & pans are fully submerged in the sanitizer solution for at least 2 minutes. Ensure sanitizer solution is changed periodically and that Quats concentration is at least 200 ppm

- No evidence of pests during the inspection
- Wet wiping cloths are in Quats sanitizer solution of 200 ppm
- soups & meatballs hot held @ 60 Degrees Celsius in front counter
- all coolers are < 4 Degrees Celsius
- walk in freezer is -13 Degrees Celsius, Food is solid
- Employees are FOODSAFE certified
- temperature logs for coolers are satisfactory
- all food is covered and off the ground in walk in cooler
* Microwave is used to reheat meat balls
- ensure meat balls are reheated to at least 74 Degrees Celsius/165 Degrees Fahrenheit*
