Follow up inspection:
-Ventilation canopy was professionally cleaned and it was in a clean condition at the time of inspection.
-Floor, paneling, and shelving unit near the cooking area was cleaned to remove buildup.
-Extra containers were removed from the food premises.
-Dry storage room was re-organized and was de-cluttered when compared to the routine inspection.
-Chemicals were being stored separately from food.
-Dough mixer was cleaned last night according to the Operator however had a bit of flour debris over it as it was recently used this morning. Cleaning frequency of the dough mixer (every 4 hours between use and after final use each day) was reviewed with the Operator.
-New thermometers were available inside the two prep. tables near the handsinks in the front service area and back prep. area.
-Food was being covered inside the walk-in-cooler at the time of inspection.
-100 ppm chlorine sanitizer was available in the third compartment sink unit.
