209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Noodles stored next to back kitchen hand washing sink. Hand sinks are dirty and food should not be stored in or next to it. (CORRECTED AT THE TIME OF INSPECTION)
2. Large cooking pots of soup stored directly on the ground. The ground is dirty. Do not store food directly on the floor.

3. Light covers are missing for back storage light tubes. Covers are needed to prevent shattering of glass in work area.
4. Storage of food lacking in food grade covers or containers, especially the bone cooler. Bones are directly touching the freezer without any packaging or covers. This can lead to contamination of food.
Corrective Action(s): 1. Do not store or place food in hand washing sinks. They are contaminated.
2. Do not store containers of food directly on the ground. Food containers should be on shelving or at least 15 cm above the floor.
3. Repair and replace light covers. Repair required in 2 weeks.
4. All food storage should have food grade covers or lids. Correction required this week.

Observation: General cleaning needed throughout kitchen where old food debris and grease build up is observed, such as behind stoves, under grill, on the wooden shelf of meat slicer, dry storage area flour spill, spills inside cooler/freezer and etc.
Corrective Action(s): Clean and sanitize these areas accordring to the sanitation plan to prevent attraction of pests and contamination of food. Correction required this week.

Observation: Cardboard is used to line cooler shelves. The cardboard is now mouldy and contaminated.

Condiments in use are suspended in ice.
Ice machine is sanitary with dedicated scoops.
