General sanitation - good. Walk in cooler at 3.6 C. Bar walk in cooler at 3.2 C. Bar cooler at 4 C. Walk in freezer - satisfactory. Hot holding internal food temperatures (cooking line) at 60 C. Food is stored safely at time of inspection (covered, dated, raw and ready-to-eat well organized). Note: In use utensils are stored in an ice water bath, or in a hot water bath on the grill. Hand washing stations (front and back) are unobstructed and supplied with hot and cold running water; liquid hand soap, and single use paper towels. Clean equipment and utensils stored in sanitary manner. Quaternary ammonium compounds (Quats) sanitizer at 200 ppm in labeled buckets and labeled spray bottles (front and back of house). Low temperature dishwasher (kitchen) at 100 ppm of Chlorine in rinse residual at utensil surface. Dry storage area organized (pest proof containers available). Note: Chemicals are stored in a separate area away from food. No signs of pest activity observed at time of inspection. Traps set. Temperature logs maintained. Bar low temperature glass-washer at 100 ppm of Chlorine. Staff washrooms (M&F) - clean; supplied with hot and cold running water; liquid soap and paper towel.
