Observation (CORRECTED DURING INSPECTION): One pot of broth from previous day's cooking was found to be at temperatures of greater than 4 degrees Celsius (7 degrees C observed).
Broth observed to be cooling in prep sink with cold water
All other broth from previous day measured to be at temperatures less than or equal to 4 degrees Celsius.

Corrective Action(s): Discussed cooling procedure with Head Chef. Ice is used however it was not observed in use during inspection by EHO - only cold water bath observed.
Use ice to rapidly cool such large batches.
The broth should also be cooled in many small containers versus few large containers.
There was one ice wand found at facility which was not in use. FHA recommends use of ice wands to assist in rapid cooling. Ensure ice wands are kept in sanitary condition as they are in direct contact with food. Ensure ice wands are used according to manufacturer's directions or items will crack/break. Obtain additional ice wands.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Old under counter Pizza cooler unit has cracked, peeled and requires repair.
The stainless steel counter has been patched and now requires replacement. This was discussed at previous inspection. Food debris observed in the gap in this area. Area can not be easily cleaned.
The fronts of the cooler unit have peeled all laminate coating revealing wood panelling below.
The inside of cooler unit has exposed wood from peeling solid surface material.
2) The upper counters of the stainless steel units have all been replaced at some point however the lower shelf has not. These lower shelves are in poor condition.

Corrective Action(s): 1) The under counter Pizza cooler unit is not in good condition and requires repair/replacement AS SOON AS POSSIBLE.
2) The lower shelves of the worn counters require resurfacing/repair/replacement.
