302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): A food handler was observed wiping her hand with a cloth towel after preparing food and then wiping the prep. table with the same cloth towel.
Corrective Action(s): The dry cloth towel was removed. A new clean cloth towel was used to sanitize the table with 100 ppm chlorine sanitizer (bleach water). Ensure all prep. surfaces and food contact surfaces are properly sanitized between use. Do not use dry cloth towels to wipe hands or wipe food contact surfaces are there is a potential for cross-contamination. Keep the clean towels immersed in 100 ppm chlorine sanitizer between use near the prep. area and ensure the bleach water and cloth is changed frequently throughout the day in accordance with the usage (e.g every 2-3 hours).

Observation: Cupboards where pizza trays are stacked and other food contact surfaces inside inserts are stored contained debris on them. Shelves inside the walk-in-cooler had debris on them.
Corrective Action(s): Clean and sanitize the above noted areas with a cloth immersed in soapy water and then a cloth immersed in 100 ppm chlorine (bleach water). Place a washable, smooth, and durable liner inside the shelves of the cupboards/cabinets and walk-in-cooler. Correct within 1 week.

Comments

Handsinks were adequately supplied.
Staff member was washing her hands at the handsink prior to handling food at the time of inspection.
Walk-in-cooler was 4 degrees C or less (2.5 degrees C).
Prep. cooler/pizza cooler was 4 degrees C or less (2 degrees C).
Upright freezer and chest freezer were -18 degrees C or less.
100 ppm chlorine sanitizer was available in the spray bottle.
Drain plugs were available for 2-compartment sink.
No signs of recent pest activity were observed at the time of inspection.
*It was discussed that FOODSAFE Level 1 certificates issued prior to 2013 will expire next July 2018. Ensure that the operator and one person in the absence of the operator per each shift maintains valid FOODSAFE training. Refer to the FOODSAFE website for details.
