General observations:
Coolers were 4 degrees C or less.
Freezers were -18 degrees C or less.
Hot holding units were 60 degrees c or more.
Coolers and freezers equipped with thermometers.
Food storage practices are good.
Hand sinks stocked with liquid soap and paper towels.
Sinks equipped with hot and cold running water.
Food handler hygiene is satisfactory.
General sanitation is satisfactory.
Chemicals are stored in a safe manner.
Bleach sanitizer (spray bottle): 200 ppm chlorine.
High temperature dishwasher had a final rinse temperature of at least 71 degrees C (as per thermal label).
No signs of pests onsite. Premise is serviced by Rentokil pest control under contract with premise operator, rather than Ecolab that is used throughout most of the mall.
Upstairs storage area to be inspected upon next routine inspection.

Discussed the use of the two induction hot plates in the back kitchen area. Operator states they are used only to cook soups because the pots are too heavy to carry to the stove in the front. Operator states they gained approval from the fire inspector.
