Comments

General sanitation is acceptable but required attention in several areas.
Note: Please refer to the violation section.
All hand sinks are stocked with cold/hot running water, soap, and paper towels in dispensers.
Walk-in cooler (downstairs) at 3.4 C ;
Front under-counted coolers < = 4.0 C;
Walk-in freezer (downstairs) at -18 C;
Note: Temperature log was available on site. Kept up to date.
Hotholding unit at 76 C;
High temperature dishwasher achieved 74 C;
3 compartment sink - satisfactory (drain stoppers - available);
Note: Observed clean salad in a bowl near 3-compartment sink/near the sanitizing compartment; & salad debris in the sink;
Immediately. Use dedicated prep. sink; The sanitizing compartment must be set already (Quat at 200 ppm);
Quat sanitizer - available (a dispenser & buckets);
Review the Sanitation Plan & follow;
Test strip readily available.
Dry storage area - satisfactory;
Staff washroom downstairs - properly stocked;
No signs of pest activity.
