Observation (CORRECTED DURING INSPECTION): * Dishwasher was not working upon initial inspection; operator mentioned they had checked it in the morning, however, sanitizer was not working so dishware was not being sanitized; operator tried to prime the sanitizer line to get the minimum 50 ppm sanitizer concentration at the plate surface
Corrective Action(s): * Ensure the sanitizer concentration checked daily and DOCUMENTED; this should be done in morning for that day

Observation: * Scoops and spoons used to scoop out the condiments for ice cream and other food items were found on top of the lids and this is unsanitary practise; operator removed these scoops/spoons to rewash/resanitize and were told to store them in sanitary manner (eg. on separate plate, etc) beside the containers
Corrective Action(s): * Ensure all scoops and spoons stored properly in sanitary manner as these are reused through out the day

Observation: * Some build up of grime/debris found under food equipment and shelving and along baseboard too; operator reminded that all cleaning must be done frequently enough to remove build up and maintain sanitary condition

Observation: * Staff cell phone and other items found in food equipment area and this is unsanitary practise; operator reminded that ALL staff personal stuff to be stored away from food/food equipment areas and at designated staff storage area

* Sanitizer was available and at 200 ppm quaternary ammonium concentration in buckets to store wiping rags
* Hand washing stations had liquid soap and paper towels
* Dishwasher final rinse was 0 ppm chlorine residual at plate after multiple cycles; operator primed dishwasher sanitizer to get the 50 ppm chlorine sanitizing rinse; operator was told to rewash/resanitize ALL dishware, cutlery and glasses prior to reuse; operator to record/document dishwasher sanitizer checks daily
* Hot-holding units were 60'C/140'F or hotter
* Note: cleaning to be done under some food equipment/shelving to remove build up of grime/debris (cooking line too)
* Note: do not store scoops/spoons directly on lids of insert containers as this is unsanitary
