306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: * Shelving and other food equipment were not in sanitary condition as they had a lot of build up of grime/debris. Food equipment and shelving must be kept in sanitary condition and cleaned/sanitized more often to reduce build up. Some floor areas under food equipment and wheels/legs of equipment require cleaning attention too
Corrective Action(s): * Ensure ALL food equipment/shelving properly cleaned and sanitized and maintained in sanitary condition

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: * Under counter freezer unit was broken and not working at time of inspection. Staff mentioned that freezer had been broken for some time. Staff on site did not know how to use dishwasher so they were not using it as owner/operator was not available to show them how to use it
Corrective Action(s): * Ensure ALL food equipment working and maintaining proper temperature for freezers (ie. -18'C or colder)
Repair immediately. Repair dishwasher and ensure it is working properly-- use 3-compartment sink temporarily

Observation: * Staff cell phone was found on food counter where food was being prepared. This is unsanitary and staff personal items should NOT be stored in food areas. Also, staff put a purse on the deep fryer unit and were told to move it to staff storage location. Also, front display cooler is not working and must be removed from premises(ie.taken home)
Corrective Action(s): * Keep ALL staff stuff in back staff storage areas (near back door). Remove small display case from front area as it is not working/used. This has been discussed on previous inspections many times!

Observation: * One staff person was not wearing proper attire while handling food. They were told to put on apron to reduce risk of cross contamination

* Cold-holding units were 4'C/40'F or colder
* Hot-holding for pizza was found to be 60'C/140'F or hotter
* Sanitizer was available (bleach solution) for storing wiping rags and at 200 ppm concentration
* Hand washing stations had liquid soap and paper towels available
* Food was covered overall; reminder ensure ALL food covered in storage areas
* Note: Dishwasher was not working so operator to get it working tonight
* Some reorganization and cleaning required, etc; staff stuff (eg. cell phones/bags) to be stored in back staff area NOT on food counters, etc.
* Note: undercounter freezer to be repaired too
* Follow up inspection: Nov. 2, 2017
