Observation (CORRECTED DURING INSPECTION): Dishwasher was reading 67.6C at the plate. Manager called Ecolab for repair. In the interim, operator used the dishwashing machine to wash and rinse only. Dishes must be sanitized in 100ppm bleach or 200ppm quats and then air dried.

Observation (CORRECTED DURING INSPECTION): No soap at handwashing station at the salad bar area.

Observation: Walk-in cooler near the office: black residues that looked like black mold found on ceiling, food debris and clutter observed underneath the shelving units.
Corrective Action(s): Clean and sanitize the ceiling and remove food debris and clutter underneath the shelving units.

Observation: Dishwasher final rinse temperature at the plate was 67.6C.
Corrective Action(s): Repair dishwasher so that it is reading 71C at the plate. Until such time, continue to use the machine in addition to a chemical sanitizer (chlorine 100ppm or quats 200ppm) and air dry. Use test strips to ensure sanitizer concentration is reached.

General sanitation was satisfactory (except in the area noted above).
-All other handwashing sinks were equipped with hot and cold running water, soap and paper towels.
-Some food items in all coolers were checked and were = or < 4C.
-Food in walk in freezer -28C
-No evidence of pest activity noted. The last pest control report was Jan 15/2019. Operator reported that there is a pest control contract in place for service every 2 weeks. Report for Feb. not available.
-Glass dishwasher was 72.9C at the plate.
-Cooler at the meat grill (beef at 4C)
-Glass washer at the bar at 12.5ppm iodine
-Cooler at <4C at the front bar.
