1) Observed the use of cardboard to absorb grease in kitchen area.
2) Observed the use of opened metal cans as grease cateliers that were attached to the ventilation hood.

1 & 2) Corrective Action: Remove the cardboard & opened metal cans to ensure surfaces are smooth, non-absorbent, and are easily cleanable.

Observation (CORRECTED DURING INSPECTION): Observation: During inspection observed a spray bottle containing an unknown cleaner.

Comments

- Hand washing stations equipped with hot / cold water, paper towel, liquid soap
- Washroom equipped with hot / cold water, paper towel, liquid soap

Temperatures:
- All fridges were belos 4C during inspection
- All freezers were below -18C during inspection
- Hot holding of rice was probed at 67.2C
- Thermometers present in all freezers & fridges

General sanitation & Maintenance:
- High temperature dishwasher was measured at 78.2C on plate surface & 88C at manifold
- Bleach sanitizers in buckets were set-up during inspection
~ They were measured at 200ppm
- Ice machine was clean & sanitary
* Ensure to keep all food products in storage organized
- Ventilation hood is maintained, however, service is overdue as of April 2022
~ As per operator, service provider has been reached out to
- General sanitation & cleanliness is adequate
- No signs of pests during inspection
- Washrooms were clean & sanitary during inspection

Administrative:
- Permit is conspicuously posted at kitchen entrance
- FoodSafe Level 1 or equivalent was available during inspection
* Temperature logs were not available
- Pest control is provided by building owner, records were not available
