Observation: Hand sink at servers station leaking badly. Interceptor bucket undrneath sink full and overflow apparent. Beginning to stink.
Corrective Action(s): Empty and replace bucket daily as interim measure. Fix leak as discussed.

Comments

*Recommend adjusting the main Quats feed in storage room and/or fix the faucet itself to stabilize the concentration of outgoing quats to 200 ppm or slightly more. Possibly a result of the hot water side of the tap malfunctioning. Fix as necessary.
**Dishwasher feeding approximately 25 ppm chlorine (possibly lower). At current rinse water temperature (60 C) residual ok, but recommend adjusting the concentration closer to 50 ppm for better margin of error.
*Fruit or drain flies (very minor) noted in male employee washroom only. Watch out for the toilet scrubbing reservoir and any pooling water around the toilet. Recommend keeping a small volume of (any) chemical in noted cup to deter breeding.

Hot holding above 60 C
Freezing units below -18 C
**Temp logs and chemical logs maintained.
Bar area all good.

General kitchen cleanliness and organization continues to be maintained at a high level. Using Wash n Walk on floor (including foamer) with good results noted. Floor looks good.
