Observation (CORRECTED DURING INSPECTION): Halibut being thawed in running water - water and halibut both 15C
Corrective Action(s): Thawing process must be more closely monitored so that as the fish is thawed it is either sliced or whole fillets placed in the refrigerator to minimize temperature abuse - do not continue to leave in water.
If immediately portioning fish make sure that it is laid out on bakers sheets to cool rapidly before stacking in containers.

Observation (CORRECTED DURING INSPECTION): Portioned fish in below counter cooler too warm at 14C - 17C
Corrective Action(s): All potentially hazardous foods above 4C for greater than two hours to be discarded and this unit taken out of service until repaired/replaced.

Observation: Food being stored in below counter cooler that has exposed insulation on the sides and ceiling of the cooler (plastic interior melted when kettle placed in cooler to defrost freezer was left in too long)
Corrective Action(s): All food in containers without proper lids in place must be discarded and this unit taken out of service.
