Observation (CORRECTED DURING INSPECTION): Equipment used for slicing cheese was observed to contain debris on it at the time the pizza shop opened (~4 PM). It was mentioned that the equipment is cleaned after every 2-3 days.
Corrective Action(s): The equipment was washed and sanitized during the inspection. Ensure food equipment is washed and sanitized on a more frequent basis (e.g. every 4 hours / daily basis on the days that it is used) to maintain it in a sanitary condition.

Observation: The shelf in the flour storage area contained buildup of debris on it.
Corrective Action(s): Clean the shelf to remove the buildup of debris; Correct within 1 week. Ensure this shelf is cleaned on at least a semi-monthly basis to prevent buildup from accumulating.

Observation: Several ceiling lights were not in good working order and insufficient light was available near the back storage area, washroom, and the pizza oven.
Corrective Action(s): Ensure brighter lighting is available in the above noted areas so that the level of sanitation and signs of pest activity can be assessed. Correct within 3 months time. Provide an update to the area E.H.O. regarding the status of increasing the lighting in the food premises.

Walk-in-cooler was 4 degrees C or less.

No hot holding was occurring at the time of inspection.
100 ppm chlorine sanitizer was available in the 2-compartment sink.
