Observation: Film observed on inside surfaces of ice machine.
Corrective Action(s): Ensure that ice machine is properly cleaned and sanitized. Discard ice, clean interior surfaces, and sanitize with an approved food contact surface sanitizer (e.g. 200 ppm quats or 100 ppm chlorine). Ensure that ice machine is being cleaned and sanitized at an appropriate frequency to limit the buildup of mildew. Please add to sanitation schedule. Date to be corrected by: March 28, 2017.

Observation (CORRECTED DURING INSPECTION): In use utensils are stored in a sanitizer solution near prep line.
Corrective Action(s): Please ensure that in use utensils are not stored in sanitizer solution as it may potentially contaminate food. In use utensils may be stored in an ice bath at 4 degrees C or less, in a hot water bath at 60 degrees C or more, and/or washed and sanitized at least every 4 hours.

Routine inspection conducted:

- Coolers at 4 degrees C or less
- Freezers at -18 degrees C or less
- Hot holding internal temperatures at 60 degrees C or more
- Hand washing sinks are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Quaternary ammonium compounds (quats) sanitizer available in buckets and spray bottles at 200 ppm. Wiping cloths stored in sanitizer. Note: Few wiping cloths observed outside of sanitizer solution. Please ensure all wiping cloths are stored in sanitizer solution when not in use.
- High temperature dishwasher measured 73 degrees C at utensil surface during final rinse (minimum 71 degrees C). It is recommended to keep a daily temperature log for the dishwasher.
- Cold holding unit temperature records are available and up to date.
- No evidence of recent pest activity noted at time of inspection. Note: One bait box observed in janitorial closet--removed at time of inspection.

Note: Some debris observed under freezer in back room and cook line equipment. Please ensure these areas are properly cleaned. Food debris may potentially attract pest activity.
