Observation: Significnat clean up has occured, but some mouse droppings still noted. To be expected.
Corrective Action(s): Continue to trap and block off entry points. Continue to keep things cleaner and better organized and be sure to follow Integrated Pest Management practices (clean, kill, control entry).

Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Sushi bar cooling unit measured 8.5 C with probe thermometer and measured up to 10 C with IR gun.
Correction: Immediately have unit serviced by technician. Implement food rotation practices in this unit such that all food is replaced within two hours and/or discarded as per food safety plan. Smaller volumes of food must maintained in this unit.
**Make sure when thawing food not to leave the food in a location that cannot be monitored/observed. If allowing food to thaw, best practice should be in cooling unit, not at room temperature (crab meat), and times should be monitored.
**Check at follow up inspection date noted.

Cleaning schedule in place now for front and back. Make sure to use a date system and have staff initial work completed. Good.
Floors, under shelves, cooling units all cleaned and better organized.
*Continue to target the deep fry area (below and around) to remove grease and food debris build up as discussed.
**Shelving unit next to cookline is in very bad shape. Shelves are rotting and exposed particle board is flaking off (potentially into food). Mouse droppings noted on bottom shelf. Plan to replace and replace with wheeled shelving unit. I'll look at next inspection.
Pest Control contract in place for next three months on weekly basis. Good. Continue to follow recommendations left by technician.
Plastic containers purchased for dry food storage to improve food protection and organization. Good.
Sushi bar cooler confirmed at 2 C. Good.
