Observation (CORRECTED DURING INSPECTION): Concentration of bleach sanitizer in the spray bottle was 10 ppm
Corrective Action(s): Correction: Operator discarded and refilled with new bleach sanitizer with 100 ppm. Make sure bleach sanitizer in spray bottle is at minimum 100 ppm to sanitize food contact surfaces.

Observation: 7 trays of empty pop cans were stored in the back area.
Corrective Action(s): Correction: Recycle those cans and make sure empty cans are recycled in a higher frequency to prevent harbouring/breeding/attraction of pests.

Observation: Noted faucet for prep sink in the back was missing. Nozzel being used to run the water. Nozzel had a hole and sprayed when turned on too hard.
Corrective Action(s): Operator to repair/replace nozzel and faucet.

Observation: Prepping cooler at the front was not working at the time of inspection. Operator was aware and had already relocated all the food to the pop cooler. The cooler will be fixed today as per operator.
Corrective Action(s): Correction: Get the prepping cooler fixed.

Observation (CORRECTED DURING INSPECTION): Door was closed when inspection first started. Through the window, the operator was observed putting donair cone onto donair machine without wearing shirt. The operator wear the shirt and then open the door.
Corrective Action(s): Correction: Make sure always have clean clothing on while handling food.

Comments:
-Operating permit displayed.
-Pop cooler: 4 deg .C (ambient temperature)
-Chest freezer: -14 deg. C (ambient temperature)
-Premise is well organized
-Premise is in good sanitary condition
-No obvious sign of pest activity observed. Back door was closed.
-Reviewed manual dishwashing procedures with operator - no concerns. Drain plugs available.
-Microwave oven is used as secondary cooking procedure.
-Hand wash station had soap, paper towel and hot/cold running water.
-No ice available in ice machine.
Note: Operator paid 2018 Fiscal Permit Fee with cheque #157 at time of inspection.
