Observation (CORRECTED DURING INSPECTION): Observations: Milk and two cakes held in cooler that was probed at 14.4C air temperature. Cold, potentially hazardous foods must be stored at </=4C to prevent the growth of disease-causing pathogens.
*Correction: Operator discarded the milk and two cakes. Operator decreased the temperature of the cooler and called maintenance. Until the cooler can reach and maintain ,</=4C, cold, potentially-hazardous foods must not be stored there.

Observation: Observation: Glass dishwasher had <12.5 ppm of iodine present upon final rinse cycle. A minimum of 12.5 ppm of iodine is required to sanitize glassware such that there be no risk of disease-causing pathogens.
*Correction: Operator called maintenance. The dishwasher must not be used until the iodine concentration has been increased and reaches >/=12.5ppm on the test strips. use the high temperature dishwasher until machine is fixed. Date To Be Corrected By: June 28, 2018

Observation: Observation: The following areas showed a build-up of grease and debris or dirt:
(#1) Underneath the fryer line (i.e. to the right of BLODGETT oven and to the deep fryers).
(#2) Old tinfoil on equipment and shelving
(#3) Unsanitary rag on the door handle of the kitchen staff bathroom.
These areas will attract pests as a source of food (#1 and #2). Additionally, the grease and tinfoil are fire hazards. The unsanitary rag on the bathroom door knob (#3) will contaminate clean hands. Repair the doorknob.
*Correction: Clean the above-noted areas (#1) Remove the tinfoil and replace more frequently. Remove the unsanitary rag from the bathroom door handle.Date To Be Corrected By: June 28, 2018.

Observation: Observation: The cooler by the office and holding the milk and two cakes was at 14.4C. All coolers must be capable of maintaining foods at 4C or less to prevent growth of disease-causing pathogens.
*Correction: Operator called maintenance and turned cooler temperature dial down. Do not use this cooler until it is </=4C for cold, potentially hazardous foods. Staff should monitor all coolers and freezers temperatures 2x/day and record. Corrective action should be applied when temperatures are >/= 4C. Date To Be Corrected By: June 28, 2018

General Comments
* All sinks had liquid soap and paper towel. The staff bathroom sink was blocked by two containers, making it difficult to wash hands. Handsinks must not be obstructed, as discussed.
- Remaining coolers were </=4C
- Freezer was </= -18C
- Hot-holding was at >/= 60C
- Ice machine was free of mould and rust.
- High-temperature dishwasher reached 74.2C at the plate level upon final rinse cycle.
- QUATS sanitizer sprays were at 200ppm. Clean cloths present.
- Exhaust hood was clean; next service scheduled for Sept.
- No signs of pest activity were observed.
- General sanitation was good, work required in the previous violations.
- Permit was posted.
