- Handwashing station is equipped with hot & cold running water, liquid soap and paper towels - 200ppm QUAT sanitizer available in bucket & spray bottle - Temperatures of all refrigeration units meet regulatory requirements (<4C coolers, <-18C freezers) - Line prep cooler was kept closed during non-rush hours - Hot holding foods measured >60C - Foods are stored in small containers and are dated - Probe thermometer is present and in use for checking internal temperature of foods - Consistent temperature log is in place - General sanitation is satisfactory - No signs of pest activity noted at time of inspection - Staff demonstrate good hygiene. Clean uniform and hair nets worn. NOTE: - Do not submerge a hose in contaminated water. In the event of backflow, contaminated water may contaminate potable water supply. - Hand sink pipe was leaky. The manager noted that repair has been scheduled for tomorrow.
