Observation (CORRECTED DURING INSPECTION): QUAT sanitizer in spray bottles measured at 400ppm. This is too strong.
Corrective Action(s): The sanitizer solutions were diluted with more water at the time of inspection. Test strips are present but the color indicator label is off. Equip a new test strip with a color indicator to refer to. Follow manufacturer's instructions to make 200ppm QUAT sanitizer. The final product has a very faint pink tint.

No hot holding observed at the time of inspection.
Good labelling practice observed with food inserts/containers.
Dough mixer & roller in sanitary condition.
No signs of pest activity observed.
Overall sanitation is good.

** Low temperature dishwasher is added next to the 3 compartment sink. The dishwasher reached 52.6C during the final rinse and the rinse water measured 50ppm chlorine. Ensure to check temperature & chlorine concentration daily. The sanitizer minimum concentration is 25ppm when the rinse water minimum temperature is 49C. Obtain the test strips for checking chlorine concentration.
** Check with the city of Burnaby regarding the installation of a new dishwasher for compliance with the plumbing requirements.
