Comments

- General sanitation is good.
- All handwashing stations (front, back of kitchen) stocked with cold/hot running water, soap, and paper towels.
- All coolers (walk in, prep coolers, drawers, undercounter) < or = to 4C.
- All freezers (walk in) < or = to -18C.
- All hot holding units > or = 60C
- Low temperature dishwasher dispensed 100 ppm chlorine sanitizer. Chlorine test strips were available. Please test the sanitizer concentration level daily (i.e. before opening) to ensure the correct concentration level is dispensed (min 50 ppm).
- Surface sanitizer available in red bucket with presoaked wiping cloths at 200 ppm Quat at each station.
- Dry storage area is good. All dry food items stored in pest proof containers with proper lid. Ensure the lids are always closed.
- No signs of pest activity.
- FOODSAFE certified staff on site.
