Observation (CORRECTED DURING INSPECTION): Condiments service cooler was not working. Only small portions of food were stored ontop of this unit to be used up in a short period of time. Condiments such as relish, fresh cut lettuce and mayo were stored at 19.8C during food service. This service cooler requires repair.
Corrective Action(s): Store fresh ingredients and perishables for immediate in the following ways:

1. In a working fridge with other ready to eat foods at 4C or below.
2. Small amounts suspended on ice than discarded after 2 hours if not used.

Repair unit so 4C and below can be maintained before storing food for more than 2 hours in this unit.

Observation (CORRECTED DURING INSPECTION): Bottles of beer were stored next to or below raw ground beef inventory. Juices from raw beef can contaminate the beverages with pathogens.
Corrective Action(s): Ensure to store ready to eat foods on dedicated shelving away from or above raw protein to prevent cross contamination.

Observation: Front condinments service cooler not working at the time of inspection. The inside of the unit was empty. Ambient temperature detected at 19.6C.
Corrective Action(s): This unit requires repair and operator states they are waiting for parts in the next week. Repair unit and ensure temperature of this unit can reach 4C and below. Correction required in two weeks.

Premise is sanitary.
No signs of pests at the time of inspection.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Dedicated utensils for raw proteins and ready to eat foods. The red tongs are for bacon only.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washrooms are sanitary with fully stocked hand sinks.
Ice machine is sanitary with dedicated hand scoop.
Take out containers and utensils are sanitary.
2-compartment sink in use. Quat sanitizer in use at 200 ppm.
Dishwasher final rinse at 71C at the plate. This unit requires time to warm up.
Valid Permit posted in conspicuous location.

Holding units:
Fryer freezer -15.4C, juice and dessert cooler at 3.2C, grill cooler at 3.2C patties, deep fry chicken station 3.5C,
Walk in cooler at 3.8C chicken, walk in freezer at -10C currently in restocking, -18C is required for long term storage.
Hot holding sauce units at 60C and above.

Note: Dining area is currently undergoing strata heating repair. The roof is leaking some water but the area is closed off to avoid slipping.
Additional hand sanitizer station was placed at self service drink station as per Covid guidelines.
