Observation (CORRECTED DURING INSPECTION): Two pieces of cooked potatoes left in the hot holding unit were measured at 34C.
Corrective Action(s): Food discarded. Ensure that food are kept at >60C in the hot holding unit or cooler 4C if not immediately used.

Observation (CORRECTED DURING INSPECTION): 1) No bleach sanitizer in the kitchen and wet wiping cloth left on the counter. 2) Some mildew noted inside ice machine.
Corrective Action(s): 1) Ensure to mix 100ppm bleach sanitizer separately in the kitchen and bar. Wet wiping cloth should be stored in 100ppm bleach sanitizer between uses. Operator prepared sanitizer immediately. 2) Staff wiped down the ice machine immediately.

Observation: 1) Several inserts of food were uncovered in the prep cooler (e.g. raw meats). 2) A few inserts of food were stored on the floor of walk-in cooler.
Corrective Action(s): Please ensure to cover food after between meal services and to store food off the floor.

Observation: Fresh mice droppings found under dishwashing sinks and behind dough mixer.
Corrective Action(s): Please remove mice droppings. Have pest control technician identify potential pest entry point as this seems to be a problematic area. Seal the entry points with durable material.
