302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: No chlorine sanitizer detected in the dishwasher during final rinse cycle.
No chlorine detected at the glass surface in the glass washer.
Corrective Action(s): Repair or adjust both the main dishwasher and bar glass washer so that they are able to dispense 50-100 ppm chlorine at the plate/glass surface during final rinse. In the mean time all washed dishes and glasses must be sanitized manually by soaking in 100 ppm chlorine bleach solution (1 oz bleach per gallon of water). (Immediately).

You must test and record chlorine santiizer concentration for both units at least once a day.

Observation: No paper towels avaialble in the paper towels dispesnsers at both hand sinks in the kitchen. The ceramic hand sink in the back preparation area found to be inaccessible.
Corrective Action(s): Ensure paper towels are provided in both paper towel dispensers at the hand sinks. Ensure hand sinks are accessible to staff at all times ( Immediately).

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up of food and debris noticed underneath the shelves in the walk-in cooler. Ceiling tiles in the main kitchen require cleaning
Corrective Action(s): Clean floor in the walk-in cooler throughly to remvoe food build-up. Clean or replace the dirty ceiling tiles above the dessert cooler.
Ensure all food items and produce boxes etc are stored off the floor on shelve or pallets. ( October 19, 2018)

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): Shredded letuce and other food items were found stored in Mistral multipurpose cans. Fresh tortiall chips bucket was covered wih a garbage bag.
Corrective Action(s): Use only approved food-grade containers to store food items. All food items stored in these cans/ were discarded during the inspection. Do not use garbage bags to store or cover food items as they are not made of food-grade plastic and could lead to food contamination ( October 18, 2018).

Observation: Excessive condensation/water pooling observed in the main bar cooler. The fan unit found be rusted and deteiorated.
Corrective Action(s): Remove all food and beverages items from this cooler and relocated in another cooler. Repair or replace the unit as soon as possible ( October 23, 2018).

* Temperature logs and sanitizer logs are not up to date. You must monitor and record all cooler temps, hot holding temps and dishwasher/bar washer sanitizer levels at least once/day.
Failure to monitor will result in further enforcement action.
*Ensure all cleaner and sanitizers in spray bottles are labelled accurately. Refill all bottles again carefully diluting them as per manufacturer's instructions.

Line coolers across from the grill < 4 C.
Preparation cooler locate on the left side of the oven < 4 C.
Hot holding of chicken, rice and all sauces > 60 C.
Beer coolers < 4 C.
Upright freezer below 4 C

*Dessert cooler at 5.0 degrees C. Must be 4 C or below.
