Observation (CORRECTED DURING INSPECTION): Precooked sausages, precooked bacon and eggs left out at room temperature during lunch rush, 10C or higher.
Operator said he is using time as a control, keeping out for lunch rush 1-2hrs each day.
Corrective Action(s): Cumulative time for keeping things out should be no longer than 2hrs.
Please keep limited quantities that can be used up same day, as soon as possible.
Keep foods in the fridges below at 4C.
Thermometer temperatures for other fridges at 4C.

Hand wash station supplied with hot and cold running water, soap and paper towels in dispenser.
Fridges all have digital or working thermometers. Several probe thermometers available in facility.
Dishwasher 71C hot water sanitizing.
No signs of pests at the time of inspection.
Freezer <-18C.
Washrooms are generally clean.
Dry storage area is organized and tidy.

Freezer is very full, with heavy build up of ice. Recommend defrosting freezer and putting in less food items to ensure it works efficiently.
