Observation (CORRECTED DURING INSPECTION): Wiping cloths are not being properly stored.
Corrective Action(s): Corrected! Use 100ppm bleach - 30 ml (2 tablespoons) of 5% unscented bleach in 4.5 litres (1 gallon) of water. Change sanitizing solutions in sinks and buckets every couple of hours. Use test strips to measure the concentration of sanitizer.

Corrective Action(s): Facility is required to be kept clean and organized. Cleaning of "hard to reach" areas is to be conducted on a routine basis by pulling all items away from walls.

- Temperature Control: Monitoring is required. Gauges noted and are to be kept securely fastened inside all refrigeration units. Probe style gauge on site for internal cooking temperature monitoring. - Mechanical Dishwasher: High Temperature = 72.1 C.
- Bar Glasswasher: Front service area not functioning. Currently not being used. All implements are washed and disinfected in the kitchen.
- Wiping cloth storage: Refer to Violation notes.
- Food Storage: Refer to Violation Notes. Food separation discussed. Thawing procedures discussed. No food items are permitted o be stored in opened, original metal containers.
- Sanitary Facilities: Acceptable.
- Chemical Storage: Acceptable.
- Garbage, Grease and Composting Disposal: All items are to be kept stored in covered, rodent proof bins.
- Staff Hygiene: Routine hand washing is required to be conducted by all staff. Glove use discussed. No bare hand contact with cooked, ready to eat food items permitted.
- Ice bin cleaning discussed.
- Pest Control: Monitoring is required to be conducted on site. No signs noted this date.
- Structural: Deteriorating surfaces/conditions noted. Continue efforts to keep all surfaces in good repair.
- Food Safe trained staff on site.
- Food Safety Plan and Sanitation Plan information are to be kept on site for reference. Generic chart on site.
Notes:
* Limit use of cardboard to line surfaces within this facility. Increase cleaning if required.
* No food prep is permitted on deteriorating butcher blocks/surfaces. Cutting boards are required to line the surfaces prior to any prep.
