Observation: Rat feces observed throughout kitchen and in storage areas. Feces on shelves, on microwave, under microwave, on top of cooler units, floor, under grill, behind freezers, next to printer, behind fan, on top of spice container, etc.

Correction: CLEAN AND SANITIZE ALL SURFACES.
CLEAN AND SANITIZE ALL DISHES AND UTENSILS
DISCARD ALL TAKE OUT CONTAINERS AND SINGLE USE GLOVES THAT HAVE BEEN IN CONTACT WITH SHELVES.

-Sanitation has improved
-Fully equipped handwashing station in the back hallway is acceptable. Adjust food safety and sanitation plans to reflect changes for the new prep area.
-Walk in cooler does not leak and maintains 4C or less
-Burger prep cooler under compartment 4C or less
-Burger prep cooler top insert not in use
-Ice build up in refrigeration has been removed
-Foods to be covered when operations resume
-Ice machine clean
-Ensure facility is equipped with working thermometer, sanitizer test strips, and clean wiping rags. Do not have staff take these equipment home for any reason.
