Observation (CORRECTED DURING INSPECTION): Single-use containers were being washed and reused for portioning of foods.
Corrective Action(s): Discarded during inspection. Do not reuse disposable, single-use containers, as they cannot be adequately cleaned and sanitized and may disintegrate and contaminate food.

Observation: Two under-grill coolers (drawer-type) are not in good working order. Coolers are not currently in use.
Corrective Action(s): Have coolers in working condition and operating at 4 C or colder by 10th December 2016. Call for reinspection once fixed.

Comments

*General sanitation very good throughout premises. No significant pest issues observed during inspection.
*Note: 2-3 fruit flies were observed in the bar area. Ensure area is kept free of spilled drinks and food, and have the issue professionally treated if numbers persist or increase.
*All cooler and freezer temperatures satisfactory, with the exception of the units noted in the violations section.
*Hand sinks equipped with warm water, liquid soap and paper towels. Ensure paper towels are kept at the far hand sink at the end of the prep line.
*Low-temperature dishwasher provided a sanitizing rinse containing 50ppm chlorine sanitizer.
*Glass washer provided a sanitizing rinse containing approximately 12.5ppm iodine sanitizer.
*Knives and utensils generally stored in clean condition. Meat slicer maintained in clean condition.
*Quat sanitizer available at 200ppm in bottles and cloth buckets.
*Dry goods storage area maintained in tidy condition.
*Organization of raw and ready-to-eat foods in walk-in cooler and freezer satisfactory.
*Hot holding temperatures measured at 60 C or higher.
*Ice machine (chest section) maintained in satisfactory clean condition. Ensure manufacturer's directions are followed regarding cleaning and sanitizing schedule for this unit.
