Observation: Salad cooler in the front is measured at 8.9C ambient temperature.
Corrective Action(s): Please adjust cooler temperature so that it is at 4C or colder. Discard sliced tomatoes and salad greens if temperature does not drop.

Observation (CORRECTED DURING INSPECTION): Roast meat was measured at 50.4C.
Corrective Action(s): Please reheat to 74C then keep it hot at 60C or hotter.

Observation (CORRECTED DURING INSPECTION): Inquired how manual warewashing is done and operator said to use water only for washing, 50-100ppm bleach to sanitize. Operator also demonstrated the warewashing with Quats test strip although Quats is no longer used, only chlorine.
Corrective Action(s): Please review proper manual warewashing as this is posted on the wall. Use detergent and water to wash, hot water to rinse off soap and 100ppm bleach chlorine to sanitize for 2 minutes before air dry.

Observation: Mice droppings and urine found in the same cabinet beside salad cooler in the front. Pest control report from Oct indicate sightings of cockroaches.
Corrective Action(s): Please remove droppings and sanitize the surface with 100ppm bleach. No signs of cockroach found at this time. Please provide pest control reports from November and December 2017 for review.

Observation: Food debris noted on the floor in the front and on the side of the salad cooler.
Corrective Action(s): Please thoroughly clean the front service area, remove all food debris/organics and spills/moisture to prevent pest harbourage.
