Observation: Ceiling vents, light covers and ceiling tiles over the dishwashing area and part of the cooking area in the back had debris build up.
Corrective Action(s): Ensure to clean these items more frequently.

Comments

Health permit was valid and posted on wall.
Hand wash stations provided with liquid soap and paper towels.
Quats sanitizer measured 200 ppm or greater.
Temperature check:
-Walk-in cooler registered 2-3 deg C.
-Prep line coolers were at 4 deg C.
-Beer walk-in cooler was at 2-4 deg C.
-Walk-in freezer and upright freezer was at -18 deg C or colder.
-Hot holding for sauces was at 60 deg C.
Temperature log was available and up to date.
Dishwasher final sanitizing rinse had >50 ppm chlorine residual on plate surface.
Bar area - hand sink provide with liquid soap and paper towels. Bar coolers were at 4 deg C.
Dry storage area - all food items were stored off the floor.
Clean uniforms provided to the employees.
Staff washrooms/change rooms were clean and provided with adequate sanitary facilities.
Public washrooms were adequately maintained.

Note: New grease trap has been installed downstairs beside storage area. Odour is no longer detectable.
Dishwasher (high temp) still being run as a low temp. (using chemical sanitizer). New dishwasher to be installed in the future.
Proper screen door has been installed in the back door leading to the garbage disposal unit.
-Ensure to defrost ice build up in the walk-in freezer. (by Oct. 17)
