Quats sanitizer in spray bottles at 200 ppm
Three compartment sink method followed for washing and sanitizing dishware. Third compartment sink 200 ppm quats.
All coolers (other than walk-in) at </=4 C
Freezer at </= -18C
No pizza hot-holding.

Recommendation
Walk in cooler temperature has risen to 44F. Staff have spent the last 1.5-2 hours going in and out, as they have just prepared pizza dough. Monitor the walk-in cooler temperature to ensure it comes down to 40F (4 degrees Celsius). Potentially hazardous foods that are stored at >/= 4C for longer than 2 hours must be discarded.
