Observation: Meat slicer observed with food debris affixed. Slicer was last used on Saturday.
Both prep coolers observed with substantial food debris build up on the runners and all surfaces inside.
Corrective Action(s): Ensure staff are trained on how to properly clean and sanitize the meat slicer. Use a flashlight to observe your work.
Thoroughly clean and sanitize the both prep coolers. Once a week cleaning does not appear to be sufficient.

Observation: Wiping cloths observed on food prep surfaces when not in use.
Corrective Action(s): Wiping cloths must be placed and kept in sanitizer until needed then returned to the sanitizer container.

Observation: Spilled food product observed in dry food storage room
Underside of shelving directly above all food preparation surfaces observed with food splatter build up.
Ceiling return vents and adjacent ceiling tiles in kitchen observed with substantial dust accumulation.
Door handle to walk in cooler as well as the door itself observed with food splatter build up.
Shelving and wall surfaces in dishwashing area observed with debris build up.
Corrective Action(s): Underside of shelving above food preparation surfaces to be cleaned daily.
Clean all areas as outlined.

Comments

New glasswasher using iodine as a sanitizer installed in the bar area. Glasswasher could not be tested as I was did not have my colorimeter with me at time of inspection. Will check sanitizer concentration upon followup inspection on Sept 1. Verified wash tank temperature at 140F and soap dispensed into wash tank.
Main dishwasher at approx. 80ppm chlorine in final rinse. Soap dispensed into wash cycle.
All cold holding equipment cold holding at <4c
Quat sanitizer at 200ppm.
