- Handsink is maintained with hot & cold running water, liquid soap and paper towel
- 100ppm chlorine sanitizer was made at the time of inspection. Ensure that sanitizer is prepared fresh every day.
- High temp. dishwasher achieved sanitizing temperature of 76C at final rinse cycle
- Temperatures of refrigeration units were adequate
- Pork that was vacuumed packed on site was being cooled adequately in the walk-in cooler
- Raw chicken was immersed in salt water in large containers. Ensure that the sink where the water is dumped is sanitized with bleach water.
- Deep cleaning is required on shelves and under shelves.
