Observation: Internal temperature of chicken, beef and other dressings in the preparation cooler registered between 7-11 degrees C.
Corrective Action(s): Transfer all of the above food items to the bottom of the cooler. Repair or replace the cooler so that it is capable of maintaining all food items in top inserts at 4 C or below at all times. Recommnded that the inserts not be filled more than half full. (Immediately).
