Observation: Pieces of black, corrugated plastic being used to cover pizza dough pans. This plastic is NOT food grade, durable or cleanable. Chemicals from the plastic can leach into the dough and the corrugated openings can NOT be cleaned a sanitized. This could attract pests. This issues has been discussed in the past 1.5 years and no changes have been made.
Corrective Action(s): Discard the black, corrugated plastic covers and purchase food grade covers/products (stainless steel or hard plastic) to cover pizza dough pans.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezer was -20C; hot holding was 66C (pizza held 45 minutes and then discarded); and thermometers present.
- Quats sanitizer present and strength of 200ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy and filters are clean and professionally done in January 2023. Next cleaning due in January 2024.
- No signs of pests.
- Valid, FoodSafe certified staff present. It is recommended to complete the refresher FoodSafe course PRIOR to your certificate expiring.
