Observation (CORRECTED DURING INSPECTION): Meat fridge is maintaining foods at 9 deg. C. Operator was aware of problem and had been keeping small amounts of product in fridge.
Front servery fridges that contain chocolate milk at 9 degrees C in first and thawing soups at -16 degrees C in other fridge both have ice build up on the fans and require defrosting.
Corrective Action(s): Ensure that all foods are maintained at 4 degrees C or colder. Operator moved product to another fridge and called repairman.
Unopened milk and soup was moved to another fridge. Open milk to be discarded, and fridges thawed. Do not use any fridges unless they can maintain foods at 4 degrees C or colder.

Observation: New handsfree faucets installed at all sinks. Some of them cause overspray while washing hands with the potential to contaminate surrounding equipment.
Food debris and grease noted in fridges.
Ensure that all staff are testing their buckets of sanitizer as they fill them. Some buckets were found to have less than 200 PPM quat residual.
Corrective Action(s): Please address spray to prevent contamination of equipment.
Thoroughly clean and sanitize all fridges.
Ensure that when filling sanitizer buckets they are tested with quat test strips to ensure a 200 PPM Quat residual.

Comments

All other fridges are maintaining foods at 4 degrees Celsius or colder.
Dishwasher and glasswasher both had a final rinse of 100 PPM chlorine residual.
Foods in warmers were all 60 degrees C. or hotter.
Liquid soap and paper towel available at handsinks.
