Observation: Dishwasher achieved 72.3 deg C on rinse cycle at first attempt. Then after 10 minutes, it was only at 70 deg C. This was a similar issue to the previous inspection where the dishwasher is not able to consistently achieved a minimum of 71 deg C after rinse cycle at the dish level.
Corrective Action(s): Service dishwasher such that it can maintain that minimum of 71 deg C after EACH rinse cycle. Staff are to continue using takeout containers only and wash/rinse/sanitize all dishes in the two compartment sink with bleach and water. Owner has said the dishwashing company is already scheduled to arrive the next morning. Send a copy of the invoice/report from the service company indicating that the dishwasher is able to meet these requirements. Business card provided with e-mail address.

Comments

High temperature dishwasher achieved 72.3 deg C on rinse cycle (ie. greater than 71 deg C, at dish level). Thermometer was placed in dish tray and the cycle was run. After cycle finished, thermometer was removed and the maximum recorded temperature was 72.3 deg C. After waiting for 10 minutes, dishwasher was tested again to ensure it could consistently reach this temperature. However, after the second attempt, the maximum temperature recorded was 70 deg C only. Dishwasher still not able to consistently maintain a temperature of 71 deg C after each rinse cycle. This indicates that the equipment requires servicing or potentially replacement.

Discussed with owner that staff need to know how to use thermometers to check the dishwasher temperatures every few hours or at least 2x daily to ensure that the dishes are minimum 71 deg C. Also discussed that each load must reach >71 deg C consistently.
