Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at 4C or below.
All freezers measured at -18C or below.
Hot holding measured at 60C or higher.
Items held in room temperature (e.g., cheese curd, sliced onions, etc.) are time coded and tracked.
Temperature log available and current. Log reviewed on site.
General sanitation is adequate.
General food and dry item storage practice is adequate.
QUATS sanitizer measured at 200 ppm as per test strips. Test strips available on site.
H2O2 in use for dining area only.
3 compartment sink used for manual dishwashing. Drain plug available.
Routine pest control in place. Recent reports reviewed on site.
No sign of recent pest activity noted at this time.
Kitchen ventilation unit cleaning due April 15, 2022.
Appropriate personal hygiene practice noted such as use of hair net, clean uniforms, etc.
