Observation (CORRECTED DURING INSPECTION): Several items in deli prep cooler were above 4C at time of inspection:
1)Meatballs internal temp 10C, placed in prep cooler at 10 A.M. (6 hours ago)
2) 3 containers of pulled pork - internal temp 10C, placed in prep cooler at 12 PM (~4 hours ago)
*Note: prep cooler had ambient temperature of 8- 10C.
Corrective action:
1)Discard the meatballs.
2)Immediately place the pulled pork containers to another prep cooler capable of maintaining 4C or lower.

Ensure that potentially hazardous foods are stored at or below 4C at all times. Bacteria can multiply and cause foodborne illness from 4-60C.

Comments:
-3-compartment sink in use with sanitizer (quats at 200 ppm).
-Quats spray bottle available for use at 200 ppm.
-General sanitation is satisfactory - there is no build-up of food debris on floor and between equipment.
-No visible signs of recent pest activity at time of inspection.
-Deli slicer is clean -no signs of grease build-up or food debris.
-Receiving area outside is clean and uncluttered.
