- Low temperature dishwasher in use. Chlorine sanitizer dispensed at 50 ppm during the final rinse.

*Monitor the temperatures of the small prep cooler as it is a little warm at 7C. Perishable foods such as dairy, meat, chopped vegetables must not be stored above 4C for more than 2 hours. Store only what you will be using immediately and not longer for more than 2 hours. After the 2 hour limit has passed, the perishable foods must be discarded. Arrange for repairs if this cooler is unable to return to 4C.
