Observation (CORRECTED DURING INSPECTION): Two buspans of sauce were stored on a rack at room tempearture and was probed at 21C (air temperature of 20C). Staff stated the sauce was made 3 hours.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less. Large containers of food cannot cool from cooking temprature to room temperature within 3 hours. Items were discarded at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Back handwash station did not have single use paper towels.
Corrective Action(s): Handwash stations must be accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Single use paper towels were replaced at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Scoops were stored directing inside food containers, with the handle in direct contact with the food or the scoop completely immersed in the food.
Corrective Action(s): Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Scoops were removed at the time of inspection.

-Main walk-in cooler was at 4C.
-Back walk-in cooler was at 2C.
-Walk-in freezer was at -12C.
-Prep coolers were at 4C (top and bottom).
-Front bar cooler was at 4C.
-Chest freezers were less than -18C.
-Banquet room chest freezer was at -23C.
-Foods were cooked/reheated to greater than 74C.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitation).
-Main kitchen, service area, bar, and banquet room handwash stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pails labelled and tested at 200ppm.
-Ice machine was clean and sanitary.
-Facility is serviced by a professional pest control operator. No signs of pests noted at the time of inspection.
-General sanitation good at the time of inspection.
-Washroom clean and sanitary. Handwash stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until July 31, 2023.
