Observation (CORRECTED DURING INSPECTION): Sour Creme is portioned into small containers which are then placed into inserts on the prep line. This storage method does not allow the food to be kept at 4C or below as the cold air must pass through the insert and then through the storage container to the sour cream. Sour cream observed >4C.
Corrective Action(s): Sour creme (and other potentially hazardous foods) must be removed from the portioned containers and placed directly into the inserts OR keep the portioned container below (using door) at 4C or below.

Staff moved the sour cream to the cooler at time of inspection.
