Observation: Walk-in cooler at 9 - 10 C. Verfied product temps. too. Checked morning temp logs and unit recorded OK. Too long for defrost cycle.
Corrective Action(s): Remove all potentially hazardous foods from unit and store in alternate cooling units at 4 C or less. Have unit serviced and return food to walk-in cooler only when this unit is able to maintain 4 C or less. This will be verified at follow up inspection date noted on this report.

Hot holding units need to have more water in base to ensure all foods in this unit measure 60 C or more at all times. Needed to stir foods to get product to temperature. Water should touch base of all inserts.
