Observation (CORRECTED DURING INSPECTION): Ice machine not maintained in sanitary condition - build up of mould/biofilm observed on condenser panel.
Corrective Action(s): Empty ice machine and thoroughly clean and sanitize all parts of ice machine. Increase cleaning frequency to every 3 weeks.

Observation: - Floors and walls under and behind all equipment require deep cleaning - grease and food debris accumulation noted.
- Garbage bins had significant amount of debris caked on them.
Corrective Action(s): - Ensure deep cleaning (including all hard-to-reach areas) is done once or twice a week at a minimum.
- Ensure to regularly clean/replace garbage bins.

Comments

- All hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution available at 200 ppm in spray bottles and in sanitizing compartment of three-compartment sink.
- Sanitizer solution for storing bar towels was tested to have 100 ppm chlorine residual. *Ensure bar towels are completely submerged in solution.
- Test strips available for monitoring sanitizer concentrations
- Dishwasher had 100 ppm chlorine residual detected at the dish surface after the rinse cycle
- All coolers were measured at 4C or colder
- All freezers were measured at -18C or colder
- Hot-held food items were measured at 60C or hotter
- Accurate thermometers available. Temperature records well maintained and up to date.
- Time-tracking stickers in use for toppings/condiments held at room temperature, and for sanitizers. Good.
- Food storage practices satisfactory.
- Pest control in place, no signs of pest activity noted at time of inspection
