Observation (CORRECTED DURING INSPECTION): - Food was being dispensed for lunch service on tables at front service area. Food was not covered nor was there a sneeze guard present
Corrective Action(s): - Food must be protected from contamination at all times. Operator reported this is only for the large lunch rush and in future it will be dispensed from the kitchen (behind the front service counter)

304 - Premises not free of pests [s. 26(a)]
Observation: - Mouse droppings noted in the following areas of the floor:
- along wall by the back door
- in front of the mop sink
- along wall where rice cooker is at entrance to kitchen
Corrective Action(s): - Remove all moveable items from the floor and thoroughly clean up all droppings, paying particular attention to edges and corners. Use bleach solution to disinfect areas.
- Continue to keep floor area clear to facilitate cleaning and monitoring and so runways and harbourage areas are not created
- Retain contract with Pest Control Company for regular service for rodents. Have contract and service report present for review for follow up inspection.

Observation: - Back door to kitchen left open with no screen present
- Kitchen is cluttered creating runways and harbourage places for pests
Corrective Action(s): - Keep back door closed or have it fitted with a screen
- Remove all items not required for the business operation. This includes excess buckets, recyclables, and equipment that is not functioning (ie. broken rice cooker) [Correction date: 1 week]

Observation: - Grease accumulation and food debris noted under cooking line and deep fryer
- Grease accumulation noted on exhaust canopy. Decal indicates it was due for service July 2020
- Soiled newspaper noted on floor under cooking line and on floor of walk-in cooler

Corrective Action(s): - Clean areas noted above to remove grease accumulation and food debris.
- Have exhaust canopy professionally serviced
- Remove soiled newspaper.

Observation: - Wooden chopping block surface is damaged and has cracks/crevices present. It cannot be effectively cleaned and sanitized. Operator was noted chopping food on the surface at the beginning of the inspection.
Corrective Action(s): - Have chopping block re-surfaced so that it is smooth and capable of being washed and sanitized or remove from the premises. This has been noted on a previous report and has not been addressed.

- High temperature dishwasher operational. Final rinse measured 71C at dish surface
- Bleach sanitizer solution present. Concentration measured 200ppm chlorine
- Operator reported she completed Foodsafe level 1 about 3 years ago. Certification to be verified on database.
