Observation: Prep cooler observed at top and bottom above 4 C. Noted temperature between 10 and 11 C. This may promote the growth of pathogens in the potentially hazardous foods.
Corrective Action(s): Remove sauces and potato salad from unit and store separately, fully immersed in ice bath until unit is serviced. Do not use the unit for any potentially hazardous food storage until unit is repaired. Keep repacement inserts in walk-in cooler as temporary food rotation practice until unit can maintain proper cooling temperatures.

Comments

Chicken hot holding unit gauge is not working and work order for replacement made. Make sure to have a thermometer in the unit to ensure the food inside maintains 60 C (140 F) or more at all times. This unit and the chicken inside will be checked again at follow up inspection (date noted on report).
Have prep cooler serviced and make sure to monitor temperatures through the day to ensure it maintains 4 C range.
Grill on wheels and moved for cleaning during inspection. That is good. Make sure unit stays plugged in to ensure temperatures are maintained.
