Observation (CORRECTED DURING INSPECTION): No sanitatizer detected in the dishwasher rinse.
Pots and dishware that were washed by hand were not sanitized.
One of the two sets of taps at the three compartment sink has been removed.
Corrective Action(s): Dishwasher technician attended and the unit has been serviced. Sanitizer is detected.
When washing by hand, practice wash/rinse/sanitize.
Replace the tap so that water can reach each compartment.

Observation: Cold water tap is not working. Dirty pots are cluttering up the only handsink in the kitchen.

Observation: Uncooked samosas are stored in a reused cardboard box in the freezer.
Foods are being reheated in plastic containers that are not microwave safe.
Corrective Action(s): Store food in clean food safe containers.
Obtain microwave safe containers.

304 - Premises not free of pests [s. 26(a)]
Observation: Active mouse infestation noted.
Corrective Action(s): Continue with pest control service. Remove droppings. Ensure the kitchen is cleaned thoroughly. Continue to store ingredients in containers with lids and limit inventory.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Floor and wall surfaces are in poor condition.
Wooden shelves in walk-in cooler are dirty and the paint is in poor condition.
Shelves are lined with newspaper.
Hard to reach areas are not cleaned. Tops of containers are dirty.
Corrective Action(s): Plans are in the works to removed the rusted shelf outside the staff washroom, replace the shelving units in the cooler, kitchen floor tiles , repainting the walls. Paint walls a light color.
Retile the wall next to the single compartment food prep sink.
Remove and discontinue the use of newspaper to line shelves.
Remove clutter.
Remove the pails and items under front counter.
Remove the milk crate in the potato storage area and clean. Do not use the crates. Store items off the floor on units with casters.
Clean the opening in the dough mixer to remove flour residue.

Renovation will be in February.
Dry storage room has been reorganized and ingredients are now stored in containers with lid. General sanitation of the room has improved.
Sanitize all work surfaces in the morning before starting food preparation.
